There has been a strong push toward wholesome and fresh foods to help foster a healthier lifestyle. This is great news if you’re from Florida (like me) - because WOW do we have some fresh, wholesome and local options.
One of the great things about living in Florida is the availability of fresh seasonal produce. In January, when everyone is in the country is suffering through snowstorms and freezing temperatures we're able to brag about fresh tomatoes, avocados and corn!
Fresh From Florida
Florida January Seasonal Produce (aka what's in season in January):
AVOCADOS, Broccoli, Cabbage, Carrots, Cauliflower, Celery, CORN, Cucumbers, Eggplant, Grapefruit, Mushrooms, Okra, Onions, Oranges, Potatoes, Radishes, Squash, Strawberries, TOMATOES
Ok, enough bragging about living in Florida while you all are freezing! I am super excited to share a delicious recipe with you that takes a whole 10 minutes to make.
Florida Corn, Tomato and Avocado Salsa recipe
INGREDIENTS:
- 4 ears corn, roasted and kernels removed from the cob
- 2 large tomatoes, diced
- 1 large avocado, peeled, seeded and diced
- 1/2 cup red onion, chopped fine
- 1/2 cup bell pepper, chopped fine
- 1/4 cup cilantro, hand torn
- 1 lime juiced (plus more if desired)
- 1 teaspoon powdered cumin
- your favorite hot sauce (for heat)
- sea salt to taste
- fresh ground pepper to taste
- In a medium mixing bowl, combine all ingredients.
- Stir to combine.
- Taste as adjust seasoning (as needed) with salt, pepper and hot sauce.
